Separate 3 egg whites into a bowl and use an egg whisk at medium speed to beat for about 3 minutes until a layer of foam forms.
Add 4 – 5 drops of lemon juice and continue whisking for about 5 minutes.
Next, divide 20g of sugar into 2 – 3 small portions and gradually add each portion to help the sugar dissolve better.
When the egg whites start to become sticky, slowly add 20g of cornstarch and whisk until you can lift the whisk and see stiff peaks that do not fall off.
