How to choose fresh and delicious durian
- Shape: Fruits with a slightly irregular shape will be of better quality than large, round ones.
- Stem: Choose fruits with fresh stems that have a strong aroma. You can lightly press with your finger to test; if the stem feels wet, it is still fresh.
- Durian spikes: Choose fruits with spikes that look fresh, green, firm, and widely spread.
- Durian flesh: Naturally ripened durian is easy to separate, with a shiny yellow color, smooth texture, and rich flavor. In contrast, chemically treated durian is difficult to separate, the flesh is often coarse and has a pale yellow color.
- Aroma: Naturally ripe durian has a strong scent that can be detected from a distance. Chemically treated durian will lack the distinctive strong aroma and may sometimes have no scent at all.

How to make Durian Cheese Sponge Cake

Mix and steam the wet ingredients
Add 100ml of unsweetened fresh milk, 100ml of cooking oil, 2gr of salt, 40ml of honey, and 100gr of cream cheese into a bowl.
Next, place this bowl over a pot of boiling water and stir well until the mixture is smooth.
Then, add 270gr of egg yolks and continuously stir until the egg mixture turns light yellow, then remove the bowl from the pot.
Tip: It is advisable to whisk quickly and evenly to avoid sudden cooking of the eggs, which will cause the mixture to become lumpy. -
Mix the flour
Continue to add 15ml of rum, 25gr of milk powder, and 35gr of cornstarch to the egg mixture and stir well until dissolved.
Next, gradually sift 140gr of flour into the bowl and stir until the mixture is thick and smooth, without lumps.

Whipping Egg Whites
Put 345g of egg whites into a large bowl, use a whisk at low speed until the eggs form bubbles like soap.
Divide 140g of sugar into 3 portions, gradually add each portion one at a time and beat until dissolved. Beat each portion of sugar for about 30 seconds at low speed before adding the next portion.
When adding the last portion of sugar to the egg whites, turn the mixer to high speed and beat the egg whites until they are soft and fluffy, with a creamy texture, sticky, shiny, and smooth. Lift the whisk to create stiff peaks that bend downwards to achieve the desired consistency.
Note:- Divide the sugar into 2 or 3 portions and add it gradually bit by bit. Avoid adding all at once.
- The egg whites need to be at room temperature before whipping.

Finalizing the Cake Batter
Divide the whipped egg whites into three portions. First, add one portion of the egg whites to the cake batter mixture, then use a spatula to gently fold all the ingredients together.
Pour the mixed batter back into the bowl of egg whites and use a flat spatula to gently fold the mixture from bottom to top. Bring the spatula down to the bottom of the bowl, lift the heavy ingredients up, and fold them over to the side. Continue this process until the mixture becomes smooth.
Tip: Gently fold (scoop and lift from the bottom up) to avoid breaking the bubbles, which would prevent the cake from rising. -
Baking the cake
Preheat the oven to 160 degrees Celsius for 10 minutes to stabilize the temperature.
Prepare a baking pan lined with parchment paper, spreading a thin layer of batter about 1 small finger thick. Then, bake the cake for 5 minutes at 160 degrees Celsius.
After 5 minutes, spread durian meat and durian sauce on top of the cake, then spread another layer of batter over it.
Place the cake pan into the baking tray, add a little boiling water into the tray, and bake the cake for a second time for about 60 minutes at 155 degrees Celsius.
