How to make Pineapple Cheese Cake

Prepare the pineapple
First, wash the pineapple thoroughly, then peel and remove the eyes of the pineapple.
Next, cut the pineapple in half to remove the core and cut the pineapple into small pieces.
With 2 pineapples, you will obtain about over 1kg of pineapple flesh, then blend the pineapple flesh until smooth using a blender.
Tip: To blend the pineapple quickly and smoothly, you should divide the pineapple into 2 – 3 batches for blending. -
Cook and shape the pineapple filling
Once the pineapple has been blended, pour it into a pan, add 60ml of lemon juice, 160gr of sugar, and stir well.
Next, place the pineapple pan on the stove and cook on low heat, stirring occasionally to prevent burning.
When the pineapple juice in the pan is almost evaporated, continuously stir the pineapple until the filling thickens and becomes clearer than before, then transfer the pineapple to a bowl to cool.
After the pineapple has cooled, divide the filling into portions of 7gr each and roll them into balls.
Tip:- While cooking, take a small amount of the pineapple filling and roll it; if it doesn’t collapse, the filling is ready.
- Avoid cooking too dry as the filling will thicken more when cooled, which will make the pastry taste less delicious.

Make the pastry
Sift 50gr of cheese powder, 30gr of milk powder, and 340gr of flour No. 8 into a bowl and mix well.
Cut 250gr of softened salted butter into small pieces at room temperature.
Add 75gr of powdered sugar to the bowl with butter and use a hand mixer to mix on low speed, then add 2 egg yolks and continue to mix until well combined.
Tip: You should leave the butter out beforehand to soften; when mixing the butter and egg mixture, it will be smooth and not clumpy.Next, you add the dry flour mixture into the bowl of butter and eggs, then use a flat whisk to mix the flour and butter-egg mixture until it forms a soft, smooth dough which is the desired dough.
After that, you put the dough into a nylon bag, flatten the dough and place it in the freezer for 5 minutes.

Shaping the cake
After 5 minutes of chilling the dough, you take the dough out, divide it into small pieces, each piece weighing 10g and roll them into balls.
Next, you flatten the dough and place the prepared pineapple filling in the center, using your hands to pinch the dough around the filling and roll it into a ball again.
Then, place the dough balls on a baking tray lined with baking paper.
To give the cake a nicer color, you mix 1 tablespoon of fresh milk with 1 egg yolk, mix well and strain it for smoothness, then use a brush to apply it to the surface of the dough, sprinkle a little cheese powder on top and then bake.

You bake the cake at a temperature of 160 degrees Celsius for 15 – 20 minutes.
