Cook and blend mung beans
Green mung beans with the skin removed should be rinsed briefly with cold water to remove dirt, then placed in a large bowl to soak for 2 – 4 hours until the beans are soft. After that, rinse the mung beans thoroughly with water and drain in a colander.
Put the soaked mung beans into a pot with 150ml of water, place on medium heat and cook until the water is gone. While cooking, occasionally stir the beans with chopsticks to ensure they cook evenly and do not burn.
Once the mung beans are cooked, place them in a blender with 70g of sugar and blend until smooth. After the mixture is well combined, add 200ml of coconut milk and blend for another minute.
When the mixture is smooth and the ingredients are well incorporated, transfer it to a bowl.

Mix mung bean flour
Add 50g of tapioca flour to the mung bean mixture along with coconut milk, and mix well until the flour is dissolved. Then, strain the mixture through a sieve to obtain a smooth mung bean flour mixture.

Mix butterfly pea flower flour
Add 4g of butterfly pea flower powder into a glass with 150ml of boiling water, stir well and let it steep for about 1 hour.
In a large bowl, add 100ml of coconut milk and 100g of sugar, strain the steeped butterfly pea water into the bowl, stir well to dissolve the sugar, while gradually adding 120g of tapioca flour and 80g of rice flour, mix well for the ingredients to combine.
Strain the mixture through a sieve to remove any lumps, resulting in a beautifully colored green, smooth flour mixture.

Pouring the mold and steaming the cake
You place a large pot of water on high heat and set the steamer on top. When the water boils, you arrange the silicone molds in the steamer, add a layer of butterfly pea flower powder into the molds, and cover with a lid to steam for 5 minutes.
After 5 minutes, you open the pot lid and see that the layer of butterfly pea flower powder has dried on the surface, solidified, and darkened, then you add a layer of mung bean powder. Continue to cover and steam for another 6 minutes.
You repeat the above step to pour the cake molds according to the number of layers you like.
