How to make Grilled Coffee Cake

Cook coconut milk
Place a pot on the stove, then add 400ml of coconut milk and 350gr of sugar, stirring evenly over medium heat until the sugar dissolves, then turn off the heat and let it cool.

Mix the batter
Add 12 chicken eggs into a large bowl and use a mixer to beat until dissolved.
Next, add the cooled coconut milk mixture and continue to mix evenly.
Evenly mix the mixture of 480gr of tapioca flour, 40gr of wheat flour, 5 teaspoons of baking powder, 2 packets of milk coffee, and 2 packets of black coffee. Then, sift the flour, gradually add it to the egg bowl, and mix well to combine.
Tip:- If you don’t have a mixer, you can mix by hand.
- Do not add all the flour at once as it will cause the batter to clump and not be smooth.

Pouring into the mold and baking
Preheat the oven and cake mold at 175 degrees Celsius for 15 minutes to stabilize the oven’s temperature.
Evenly spread 2 tablespoons of melted unsalted butter on the bottom of the cake mold, then pour the batter into the mold through a strainer.
Finally, place the cake in the oven to bake for 60 minutes at 175 degrees Celsius.
Note: Only spread butter on the bottom of the mold, do not spread it on the sides of the mold. If you spread it on the sides, the cake will not have the grip to rise high. -
