How to make Steamed Grouper with Pickled Mustard Greens
-
Prepare the ingredients
After purchasing the grouper, wash it thoroughly and cut it into bite-sized pieces. If you prefer, you can leave it whole and slice it after steaming. Use a knife to make light cuts on the fish body to allow the seasoning to penetrate evenly.
If you buy pre-made pickled mustard greens, rinse them in cold water to reduce the sourness, squeeze out the water, and cut them into bite-sized pieces. If you make the pickles at home, you can use already pickled mustard greens or prepare them in advance.
Wash the ginger, peel it, and cut it into thin slices. Smash the lemongrass and cut it into pieces. Peel and slice the shallots thinly. Slice the red chili thinly (depending on the level of spiciness you want).
-
Prepare the seasoning
Mix fish sauce, sugar, salt, and ground pepper in a small bowl to make the seasoning for marinating the fish.
You can also add a little lemon juice or vinegar to enhance the aroma of the fish.
-
Marinate the fish
Place the fish pieces in a deep plate, add ginger, lemongrass, shallots, chili, and the prepared seasoning.
Use your hands to mix thoroughly so the seasoning penetrates the fish. Let the fish marinate for about 15-20 minutes.
-
Steaming Fish with Pickled Melon
Place the marinated fish on a steaming plate in the electric hot pot and steam for about 30 minutes, or you can select the fish steaming mode available on the pot.

Completion and Enjoyment

This steamed grouper with pickled melon can be served with white rice, vermicelli, or noodles, and dipping sauce is a must.
- If you want the dish to be more delicious, you can add a little straw mushroom or shiitake mushroom when steaming the fish.
- If your electric hot pot does not have a steaming function, you can use a steaming basket (or steamer rack) placed on top of the hot pot. Make sure there is some water at the bottom to steam.
- If you don’t like the melon too sour, you can soak it beforehand with some salt and sugar to reduce the sourness.
