How to make Sour Soup with Giác Fruit

Prepare the Eel
Clean the eel to remove the slime and fishy smell.
Cut into small pieces about 5cm long.
How to wash eel to remove slime and eliminate the fishy smell:- Rub coarse salt or vinegar on the eel, scrub vigorously to remove the slime, then rinse with clean water.
- Pour hot water (about 70–80°C) over the eel, scrub to clean off the slime, then rinse again with water.
- Rub flour/ash evenly on the eel, scrub to absorb the slime, then rinse clean.
- Soak the eel in diluted salt water or rub with white wine, then rinse clean before cooking.

Cook Giác Fruit for Juice
Wash the Giác fruit with water to remove dirt.
Put about 2 liters of water in a pot and add the Giác fruit to cook.
When the water boils, the Giác fruit will turn the water purple.
Strain the juice and discard the solid Giác fruit using a sieve.

Cooking sour soup with Garcinia fruit
Pour the Garcinia fruit water back into the stainless steel pot.
Wait for the water to boil, then add the eel.
Continue to add chopped tomatoes, bean sprouts, and lotus flowers.
Season to taste, and especially don’t forget to add a little fish sauce for aroma and flavor.
Finally, add chopped cilantro and turn off the heat.
