Prepare the ingredients
After purchasing the eel, clean off the slime, cut off the head, remove the internal organs and blood vessels, wash thoroughly, and then drain.
Tips for preparing eel without a fishy smell:- Use a plastic bag to put the eel and coarse salt inside, then shake vigorously for about 2 minutes, after which you can proceed to clean it as usual.
- You can use rice washing water to remove the slime until you feel the eel is clean, then start to cut it open.

You can use kitchen ash to rub on the eel’s body, then rinse off the slime several times with the ash. Finally, wash with clean water.
Remove the tops of the carrots, peel them clean, then wash thoroughly and cut into pieces about the size of a finger joint.
