How to choose fresh shrimp
- You should choose shrimp that have a transparent shell and a slight smell of the sea, not fishy.
- Fresh shrimp will have the tail curled, the body slightly bent, firm meat but not unusually fat, the shell joints on the shrimp’s body are flexible, not disjointed, the head and body of the shrimp are tightly attached to each other and do not fall off.
- Avoid buying shrimp with a fanned-out tail as they have been injected with chemicals or water to make them look plump.
- It is advisable to buy fresh shrimp at seafood shops or reputable supermarkets for safety when using!
How to choose good green amaranth
- You should choose amaranth that has a uniform green color from leaves to stems, with many tips, few leaves, and smaller leaf sizes, as this will make the soup tastier and sweeter.
- Avoid selecting amaranth with large leaves, few tips, and plumpness to prevent mistakenly choosing vegetables that have been sprayed with chemicals.
How to make Fresh Shrimp Amaranth Soup

Prepare the ingredients
To eliminate the fishy smell, after removing the head, shell, and legs from the shrimp, cut them into small bite-sized pieces and soak them in diluted salt water for about 3 minutes, then rinse with clean water and drain.
Remove any spoiled or worm-eaten leaves from the amaranth, wash it thoroughly with water, and then use a knife to cut it into small pieces about 1.5 finger lengths.
Wash and chop the scallions and coriander.

Marinating shrimp
Mix shrimp with 1 teaspoon of sugar, 1 teaspoon of salt, 1 teaspoon of monosodium glutamate, 1 teaspoon of seasoning powder, and 1 teaspoon of pepper in a bowl, stir and marinate for 15 minutes for the shrimp to absorb the seasoning evenly.

Cooking the soup
Add 1 tablespoon of cooking oil to a pot, wait until the oil is hot, then add the marinated shrimp and stir-fry over medium heat for about 3 minutes until the shrimp is firm, then add 1 liter of water.
Bring to a boil, add the water spinach, reduce the heat to the lowest setting, and season with 1 teaspoon of seasoning powder, 1 tablespoon of sugar, 1 teaspoon of salt, and another 1/5 teaspoon of pepper.
Stir well, adjust the seasoning to taste, then turn off the heat and sprinkle a little chopped green onion and cilantro on top to finish.
Note: Water spinach cooks very quickly, so when you add it, cook for about 2 more minutes before turning off the heat immediately. -
Final Product
The spinach soup with shrimp is served in a bowl with the beautiful green color of the spinach mixed with the attractive red color of the shrimp.
