How to Make Tiramisu Birthday Cake

Making the Cake Base
Separate the egg yolks and egg whites. Beat the egg yolks with 50g of sugar until the mixture turns light yellow and fluffy. Add vanilla and melted butter, and continue to mix well.
Beat the egg whites with the remaining sugar (50g) until stiff peaks form, and you can create peaks when lifting the whisk.
Sift the flour and baking powder into the egg yolk mixture, using a whisk to gently fold from the bottom up to avoid deflating the air bubbles.
Continue to add coffee and mix to color the cake base.
Combine the egg whites into the flour mixture. Divide into three portions and use a whisk to mix until the batter is smooth and free of lumps.

Baking the Cake Base
Pour the batter into the prepared mold, spreading it evenly.
Place the mold in the air fryer, baking at 160°C for about 25 – 30 minutes.
Let the cake cool in the mold for about 10 minutes, then remove and let it cool completely.

Making Tiramisu Cream
Whip the heavy cream with 50g of sugar until the cream forms stiff peaks, creating a slight peak when lifting the whisk.
In a large bowl, add the mascarpone and beat gently until smooth. Then, add 1 teaspoon of vanilla and continue to mix evenly.
Gently fold the whipped cream into the mascarpone using a whisk or wooden spoon, mixing from the bottom up to maintain the fluffiness of the cream.

Dipping Cake and Assembling Tiramisu
Cut the cake into multiple layers, place a layer of cake on the serving plate, then spread a layer of mascarpone cream on top.
Continue doing this until all the cake and cream are used up. The top layer will be the mascarpone cream. Use a spoon to spread the cream evenly, creating a smooth surface.
Sprinkle a little cocoa powder on top of the cake for flavor and color. You can also decorate with a few chocolate chips or coffee beans to enhance the appeal.

Chill and Enjoy
Place the tiramisu in the refrigerator for at least 4-5 hours or overnight for the layers of cake and cream to absorb into each other. The tiramisu will taste better when chilled.
After the cake has chilled for enough time, take it out and cut it into bite-sized pieces.
- About coffee: The quality of the coffee is very important in this cake. Use strong coffee that is not too sweet to create the distinctive flavor of tiramisu.
- About mascarpone: Mascarpone is a key ingredient that determines the richness and flavor of the cream. If mascarpone is not available, you can substitute it with cream cheese, but it will not achieve the same deliciousness as originally intended.
