Prepare the grouper
After purchasing the grouper, scrape off the scales, cut off the gills, fins, and tail, then gut the fish to remove all the internal organs and the blood vessels along the backbone.
Rub the fish with salt for about 5 minutes and then rinse it clean with water, allowing it to drain.
Use a knife to cut the fish in half and then make several slashes on the fish’s body.

- To clean and eliminate the fishy smell, soak the fish in rice water for about 15 – 20 minutes, then take it out, rinse with clean water, and proceed to cook.
- You can also use a mixture of salt and alcohol to soak the fish for about 10 minutes, then rinse again with water.
- Or use ginger to clean the fishy smell; soak the fish in water with a smashed piece of ginger added, soak for about 5 minutes, then take it out to drain before cooking.

Rub 1/2 tablespoon of seasoning on the fish and massage it evenly, allowing the fish to absorb the seasoning for about 15 minutes.

Coat with flour and fry the barramundi
Next, add 3 tablespoons of batter onto the fish, spreading it evenly to coat the entire fish meat.
Prepare an air fryer. Use a brush to spread a little cooking oil onto the mold, and also brush another layer of oil onto the fish.
Place the fish in the mold and then into the fryer. Fry the fish at 180 degrees Celsius for 15 minutes.
After 15 minutes, flip the fish over, brush another layer of cooking oil, and fry for another 15 minutes.

Making Passion Fruit Sauce
Add 200ml of filtered water into a bowl and then place a sieve on top.
Cut the passion fruit in half, use a spoon to scoop out the pulp, and place it into the sieve. Use a spoon to stir evenly to extract the juice.
Next, add the passion fruit juice, 1/2 tablespoon of seasoning, 1/2 tablespoon of sugar, 1/6 tablespoon of salt, 1/6 tablespoon of monosodium glutamate, 2 tablespoons of oyster sauce, and 2 tablespoons of chili sauce into the bowl.
Place a pan on the stove, add 2 tablespoons of cooking oil into the pan and heat it up, then pour in the minced onion and garlic to sauté until fragrant.
When the onion and garlic become aromatic, pour the entire mixture of passion fruit sauce into the pan and cook over medium heat until the sauce boils.

Cooking Barramundi with Passion Fruit Sauce
When the sauce in the pan is boiling, gently drop the barramundi into it. Use a spoon to drizzle the sauce evenly over the fish.
Continue to cook over medium heat for an additional 3 – 5 minutes for the fish to absorb the flavors, then turn off the heat.
