- 1/2 tsp turmeric powder
- 1 tsp cumin seeds
- 2 tbsp oil
- Salt to taste
For the Biryani:
- 1 cup fried onions
- 1/2 cup mint leaves, chopped
- 1/2 cup coriander leaves, chopped
- 1/2 cup raisins
- 1/2 cup cashews, fried in ghee
- 1/2 cup rose water or kewra water
- 4-5 saffron strands, soaked in 1/4 cup milk
- 2-3 tbsp ghee/clarified butter
Preparation
Step 1 – Rice:
- Wash Basmati rice and soak it in water for 20-30 minutes.
- Heat oil in a pan and add bay leaves, green cardamom pods, cinnamon stick, and cumin seeds. Fry for 30 seconds.
- Add the soaked rice and fry for another 2-3 minutes.
- Add water and salt to taste. Bring it to a boil, then cover the pan and simmer on low heat for 18-20 minutes or until the rice is fully cooked.
Step 2 – Meat or Vegetables:
- Marinate the meat or vegetables with yogurt, ginger paste, garlic paste, and salt. Keep it aside for at least 30 minutes.
