Prepare the squid
You soak the squid in dilute salt for 15 minutes, gently massaging the entire body of the squid to eliminate any odor. After that, rinse the squid 2 – 3 times with clean water and let it drain.
Cut the squid in half, use a knife to score a checkerboard pattern on both sides, and then cut the squid into bite-sized pieces. To enhance the flavor of the squid, marinate it for 10 minutes with a piece of ginger that has been sliced thinly.

Peel the onion and cut it into wedges. Cut the water celery at the base, wash it clean, and cut it into pieces about the length of a finger.

Stir-fried Squid
