Prepare and marinate the chicken
After purchasing the chicken thighs, wash them thoroughly with water and let them drain. Then use a knife to cut the meat and slice it into bite-sized pieces.
Put the chicken into a bowl along with 2 tablespoons of soy sauce, 1/2 tablespoon of seasoning powder, 1 teaspoon of oyster sauce, then mix well and marinate for 15 – 20 minutes.

Peel the shallots, chop one bulb finely, and mince the other bulb.
Wash the shiitake mushrooms thoroughly with diluted salt water, then cut them into bite-sized pieces.
Soak the dried radish in boiling water for about 10 seconds, then remove and let it cool.

Place a pan on the stove, add 1 tablespoon of cooking oil. Wait for the oil to heat up, then add half of the minced garlic and onion to sauté until fragrant. Next, add the chicken and stir-fry for about 4 minutes until the chicken is cooked and firm, then turn off the heat and transfer to a plate.

Place the pan back on the stove, add 1 tablespoon of cooking oil to the pan. Wait for the oil to heat up, add the remaining minced garlic and onion to fry until fragrant. Then, add carrots and greens and stir-fry briefly for 1 – 2 minutes, then add chili and shiitake mushrooms and stir-fry together for another 2 minutes before adding the noodles.
Next, slowly drizzle the sauce over the noodles and stir-fry until the noodles are soft, then add chicken, dried radish, scallions, and shallots, and stir-fry for about 2 more minutes before turning off the heat.
