How to choose fresh ingredients
How to choose fresh beef
- You should choose pieces of beef that are bright red, not too smooth, with the fat having a light yellow color.
- Additionally, you should choose pieces of meat that bounce back well when pressed with your fingers, without being sticky or having an unpleasant smell.
- Avoid buying meat that is pale green, has an unusual smell, or is mushy, with white spots on the meat fibers as this indicates old meat, which is not safe to eat.
How to choose fresh and clean noodles
- You should choose fresh noodles that are slightly opaque white, have a moderate chewiness, the noodles are not too glossy and smooth, and have a mild natural sour smell.
- Avoid buying noodles that are bright white, overly chewy, and have an unusual sour smell when sniffed, as they may have been soaked in chemicals. Eating these types of noodles over time can affect your health.
- Additionally, to ensure hygiene and safety, you can also make fresh noodles at home using the recipe shared by Tastetutorial.com below!

Fresh noodles should be blanched in boiling water for about 5 minutes, then rinse with cold water and let them drain in a colander.
Carrots and su su should be peeled, rinsed briefly in water, and then cut into thin strips about 2 finger lengths long.
Cabbage should have the wilted leaves and any infested leaves removed, then rinse thoroughly 2 – 3 times with water and slice into thin strips suitable for eating.
-
Stir-fry the beef briefly
Place a pan on the stove and turn the heat to medium, add 2 tablespoons of cooking oil to the pan, wait for the oil to heat up, then add 2 tablespoons of minced garlic and sauté until fragrant and golden for about 2 minutes. Take about 1 tablespoon of fried garlic out onto a plate to drain the oil.
Then, add the beef to the pan and continue to stir-fry over medium heat for about 5 – 7 minutes until there is no red color left, then turn off the heat and transfer the beef to a plate.
-
Make the beef stir-fried noodles
Continue using the pan that has the beef, add 1 tablespoon of cooking oil, wait for the oil to heat up, then sequentially add carrots, cabbage, and chayote to stir-fry over high heat for about 5 minutes.
Season the pan with 1/2 tablespoon of seasoning and 1 teaspoon of salt, then stir briefly, next add the noodles and beef to the pan, mix well for about 2 – 3 minutes for the mixture to combine and absorb the flavors.
