What is Korean rice wine?
- Korean rice wine, also known as Makgeolli, has a very old tradition in Korea and is brewed using a mixture of rice or wheat yeast for about 10 days.
- In addition, it is not filtered to maintain the milky white color of the wine; you can even see the rice sediment at the bottom of the bowl.
- The alcohol content of rice wine is only 6 – 7 degrees, so it is very light. When consumed, it does not cause headaches like other types of alcohol.
- In Korea, rice wine is often served in a large pot for easier serving to customers.
Where to buy Korean rice wine?
- You can find Korean rice wine at supermarkets, grocery stores selling imported products, or reputable stores specializing in Korean products.
- For packaged products, you should check the expiration date carefully, ensure the packaging is intact, not torn or discolored, and that the product inside is not moldy.
- You should not use Vietnamese rice wine to make this dish as the alcohol content in Vietnamese wine is quite high, altering the taste of the dish and making it less delicious.

How to make Rice Wine Bread
-
Mix the dough
Sift 200g of flour into a bowl, then add 4 tablespoons of sugar, 1/3 teaspoon of salt and mix well.
Separate 1 egg yolk into a bowl, use a spoon to beat it well, then add it to the flour mixture.
-
Mix the dough with rice wine
Next, add 40ml of unsweetened milk, 150ml of rice wine. Mix the mixture well.
Add 2 tablespoons of fresh peas, 1 tablespoon of fresh corn, and continue to mix until the ingredients are blended and the dough is sticky.
-
Let the dough rise
Wrap the bowl of dough tightly with plastic wrap or a plastic bag, and let it rise for about 1 hour at room temperature until the dough doubles in size.
How to know if the dough has risen well: You press your finger deep into the dough, if the dough retains the indentation, it shows that it has risen well.
-
Steaming the cake batter
Prepare a steamer or mold, lining it with parchment paper.
Place the batter in the steamer, spreading it evenly, and arrange a few blueberries on the surface if desired.
Put the steamer over a pot of boiling water, cover tightly, and steam the cake batter for about 20 minutes over medium heat until the cake is cooked, then turn off the heat.
Tip: Check if the cake is done by inserting a toothpick into the cake; if the toothpick comes out clean without batter sticking to it, the cake is done. -
Final product
The rice wine cake is fragrant, soft, chewy, and creamy, blending with the sweet corn and peas, making it enticing and increasingly enjoyable with each bite.
How to store bread
Put the bread in a sealed bag, storing it at room temperature for 2 – 3 days or in the refrigerator for up to 1 week.
