How to choose fresh and delicious shrimp
- For shrimp salad, you should choose those of moderate size, still alive, with a certain transparency, slightly curved backs, and hard shells.
- Choose shrimp that have their heads and legs firmly attached to the body, with tails that are evenly arranged and not overly spread out.
- Do not choose those that are too large or too small, shrimp that are suffocated or dead, cloudy in color, or feel soft when squeezed.
Tip for quickly removing the shrimp vein
- You count backward from the tail of the shrimp up to the second groove connecting the two shell segments, insert a toothpick through this position and gently pull the black vein to remove it.
- You don’t need to use a knife to cut the back of the shrimp; you can also use a toothpick to pry out the head part of the shrimp body to see the black vein. Gently pull this black thread out with your fingers, and the shrimp will be clean.
