How to choose fresh and delicious chicken
When buying live chicken:
- When buying live chickens, lift two chickens of similar size, the heavier one will have firmer meat.
- Observe that the chicken’s beak is shiny, sharp, and not slimy. The chicken’s legs are straight, shiny, and not rough, indicating a healthy chicken. The chicken’s feathers are smooth, without any foul smell, and the chicken is active, not lethargic.
- Lift the chicken’s feathers to see thin, soft skin; when gently squeezing the body of the chicken, it feels firm, not mushy, with some large yellow streaks under the breast and wings. Under the wings, if you can see meat and blood vessels, it indicates that the chicken is firm and not fatty.
When buying pre-prepared chicken:
- Observe the pre-prepared chicken to see if it has thin, smooth skin, bright color, and when pressed, it bounces back, indicating it is fresh.
- The meat should not have a foul smell, and there should be no bruises or blood clots on the skin. To buy good chicken, avoid choosing dark-skinned chickens as they are usually those that have died before processing.
- Additionally, to avoid buying water-injected chicken, pay attention to pressing the area suspected of being injected (mainly thighs and breasts) to check; if it feels mushy, slippery, or deformed, do not buy it.

How to make Chicken braised with lime leaves

Prepare the ingredients
To clean and remove the odor from the chicken you bought, wash it thoroughly, then use lime and a little salt to rub well on the chicken piece, then rinse again, and cut the chicken into bite-sized pieces.
Lime leaves are washed and cut into thin strips. Onions and garlic are peeled and minced. Chili is sliced.
How to clean chicken, without odor:
- Mix a solution of vinegar and salt in the ratio of 2 salt : 1 vinegar, then rub the mixture several times on the chicken before rinsing thoroughly with clean water.
- Smash 1 piece of ginger and a little white wine, rub it on the chicken and let it sit for 30 minutes before cooking.
- Rub a few slices of lime with a little salt on the chicken, then rinse with water to remove the odor.

Marinate the chicken
Mix the chicken well with 1 teaspoon of MSG, 1 teaspoon of sugar, 1 teaspoon of seasoning powder, and minced onion and garlic. Marinate for about 15 minutes to allow the chicken to absorb the spices.

Chicken stew with lime leaves
Place the pot on the stove, turn on medium heat, then add 1/2 tablespoon of sugar, stirring continuously until the sugar turns a brown color, at which point add the chicken and stir well.
Next, add shredded lime leaves, sliced chili, and 50ml of water, stirring well. When the water comes to a boil, reduce the heat to low, cook for about 7 minutes, then add 1 tablespoon of fish sauce, stir well, cook for another 3 minutes, and then turn off the heat.
