Prepare the ingredients
Pick the fresh leaves of amaranth and soak them in a diluted saltwater solution for 5 minutes, then rinse with clean water and drain.
Wash the green onions, remove the roots, and chop finely.

Cook the soup
Add 1 tablespoon of cooking oil to a pot, then heat it over medium heat, and add the marinated pork to sauté for about 5 minutes until the meat is firm.
Pour 1 liter of water into the pot, bring it to a boil, then add the amaranth and cook for an additional 2 minutes.
Season the soup with 1 teaspoon of salt, 1 tablespoon of sugar, 1 teaspoon of seasoning, stir well, taste again to adjust the flavor, and then turn off the stove.
