- Choose firm heads of cabbage, tightly wrapped leaves, small stems without cracks, and no brown discoloration.

- Avoid heads that are bruised, have signs of slime, or have eaten leaves.
How to choose fresh cabbage
- Choose cabbages that feel firm in hand, heavy, with tightly curled leaves, a thick, closed head, and a small stem.
- Additionally, select cabbages with light green, pale white leaves; for purple cabbage, the color should be dark purple, and the leaves should be crisp and firm.
- Avoid buying cabbages with yellow leaves, brown spots on the leaves, cracked cores, or stems that have turned brown, as they may be old or wilted cabbages.
How to choose delicious green beans
- Choose those with green stems that look fresh. Good green beans typically have a long, smooth shape without bulges. If there are many bumps, it means the beans inside are large and the beans are mature.
- Do not choose green beans that look too perfect, such as being shiny, having few hairs, and showing no signs of pests. Because they may have been sprayed with a lot of pesticides, and the remaining residues are extremely harmful to health.
How to choose fresh corn
- Choose fresh ears of corn with green husks that are not dry, soft and smooth silk, and the stem should not be dark or wilted. Especially, the outer husk must tightly hug the ear.
- Pay attention to the corn kernels; they should be plump, uniform, shiny, and straight. Do not choose ears that are too large, but rather select those that are moderately slender.
How to choose tomatoes
- You should choose tomatoes that have a bright red skin, evenly colored. The skin should be intact, without scratches, and plump, indicating fresh tomatoes.
- Naturally ripened tomatoes usually have a mild fragrant aroma that can be easily detected when smelled. In contrast, tomatoes that have been artificially ripened do not have any fragrance.
- You should select tomatoes that still have the stem attached, and the stem should be fresh, not wilted.
How to make Vegetarian Vegetable Spring Rolls

Prepare the vegetables
Carrots, cucumbers, green beans, tomatoes, cabbage, and dill should be soaked in salted water for about 2 minutes, then rinsed thoroughly with clean water.
For carrots and cucumbers, cut off the ends of the carrots and both ends of the cucumbers, then peel and dice them.
Remove the kernels from the corn and wash it. Dice the green beans and tomatoes. Chop the dill finely.
Wash the white and purple cabbage and cut it into thin strips. Soak the glass noodles in boiling water for 5 – 10 minutes to soften them.

Boil vegetables
Place a pot of boiling water on the stove, add the corn, green beans, and diced carrots, and boil for about 2 minutes on high heat, then remove and let drain.

Mix ingredients
You add cheese to a large bowl and use a spoon to mash the mixture.
Then add all the prepared ingredients from the previous step to the bowl, including: cabbage, green beans, carrots, corn, cellophane noodles, cucumber, tomato, dill.
Next, add 1/2 teaspoon of salt, 2 teaspoons of sugar, 1 teaspoon of ground pepper to the bowl and mix the cheese vegetable mixture well.

Forming the spring rolls
Prepare a small bowl and add 1 egg yolk.
Lay the rice paper, cut into rectangular shapes, on the cutting board, placing about 3 teaspoons of vegetable cheese in the corner of the rice paper. Next, fold the rice paper to form a triangle for the spring roll.
To prevent the spring roll from opening while frying, use a brush to apply the egg yolk to the edge of the rice paper and fold it, then place the freshly made spring rolls in the refrigerator for about 10 minutes to stabilize the structure.

Frying the spring rolls
Place a pan on the stove, add about 100ml of cooking oil and wait for it to heat up, then fry the spring rolls until golden for 5-7 minutes over medium heat, until both sides are evenly cooked, then remove to drain.

Prepare the sauce and finish
You dilute 5 grams of cornstarch with 20ml of water.
Heat another pan on the stove, add 50ml of cream, then add 50ml of water, 50ml of passion fruit sauce, 20 grams of sugar, and 1 egg yolk. Stir the mixture well.
Then add the diluted cornstarch and stir constantly over low heat, allowing the sauce mixture to boil, then turn off the heat and transfer it into a dipping bowl.
