How to choose fresh squash
- Choose fresh squash with a moderate size, not too big or too small, with bright green skin, straight body, and the stem still has sap.
- You should choose squash with a layer of fine hairs on the outside of the skin because this indicates it is freshly picked.
- Avoid choosing squash that shows signs of damage, feels soft when pressed, and has lost its fine hairs because this may indicate that the squash is old and not tasty.
How to choose fresh and delicious shrimp
- Choose fresh shrimp with a transparent shell that still has a slight smell of seawater, not fishy.
- Fresh shrimp usually have their tails tucked together, while shrimp that have been injected with chemicals or water will appear plump and have spread tails.
- Avoid buying shrimp whose legs are no longer tightly attached to the body or if the legs have turned black, as these are not fresh shrimp.
How to cook stir-fried gourd with fresh shrimp

Prepare the ingredients
Wash the shrimp, peel off the shell, head, and tail, remove the intestinal vein, and put them into a bowl.
Peel the gourd, wash it thoroughly, cut it in half lengthwise, and then slice it thinly for easy eating.

Sautéed Bottle Gourd with Shrimp
Place a pan on the stove, turn the heat to high, and add 2 tablespoons of cooking oil to the pan. Wait for the oil to heat up, then add the shrimp and stir-fry quickly for about 2 minutes until the shrimp is firm, then remove it to a bowl.
Next, add 1 tablespoon of cooking oil to the pan where you just sautéed the shrimp, turn the heat to medium, add the bottle gourd, and stir-fry for about 1 minute until it is coated with a nice sheen of oil, then add 1/2 cup of water (rice bowl) and stir-fry for 5 minutes until the bottle gourd is tender.
When the bottle gourd is cooked, add the pre-cooked shrimp and season with: 2 teaspoons of seasoning powder, 1 teaspoon of monosodium glutamate, stir-fry evenly for 2 minutes for the shrimp to absorb the seasoning and cook through, then taste and adjust the seasoning again before turning off the heat.
Serve the sautéed bottle gourd with shrimp on a plate, sprinkle a little ground pepper on top to enhance the flavor, and you’re done.
