How to cook Pork Stomach Stewed with Lotus Seeds

Soak lotus seeds
Soak 100g of dried lotus seeds in a bowl of cold water for 6 – 7 hours to soften the seeds. After that, rinse and drain.
Tip: To save time, it is recommended to use fresh lotus seeds instead of dried ones. You can buy fresh lotus seeds directly at the market. -
Prepare the pork stomach
Put 500g of pork stomach in a bowl, add 1 tablespoon of salt and 2 tablespoons of vinegar. Put on gloves and knead, rub to eliminate the fishy smell of the stomach, preventing unpleasant odors in the dish. After that, rinse thoroughly and repeat once more.
Boil a pot of water on the stove, blanch the pork stomach for about 1 – 2 minutes, then remove and rinse with cold water.
Cut the stomach into thick strands for eating. Marinate the stomach with 1/2 tablespoon of MSG, 10g of thinly sliced ginger, and 1/3 tablespoon of salt in a bowl. Use chopsticks to mix well and marinate for 30 minutes.

Stewing stomach with lotus seeds
Put a pot of water on the stove, when the water is hot and small bubbles appear, add 100g of thoroughly washed lotus seeds and simmer for about 15 – 20 minutes.
Next, add the marinated stomach into the pot, stir well. Then add 1 tablespoon of wine into the pot and continue to simmer for another 40 – 45 minutes before turning off the heat.
