How to choose good quality fried tofu
- Choose fried tofu that has an even yellow color, is not broken, feels soft when held, and has the characteristic aroma of soybeans.
- Avoid buying pieces of tofu that have an unpleasant smell or sour odor, as these may contain impurities or have been stored for too long, and eating them will not be safe.
How to choose the right ripe pineapple
- It is advisable to choose pineapples that are visually appealing with a bright yellow color, occasionally mixed with some green spots; the eyes of the pineapple should be evenly spaced and large, with a characteristic aroma that is not too strong.
- Pineapples that are just ripe and fresh will feel moderately soft when touched, and the skin will have slight wrinkling.
- Avoid buying pineapples that are unevenly colored, have an overly strong smell, or are predominantly green, as they will not taste good.

Prepare the tofu
Fried tofu should be rinsed briefly with water to remove dirt, drained, and then cut into small square pieces for easy eating.

Prepare other ingredients
Garlic should be peeled, washed clean, and minced finely. The chili should have its stem removed, washed with water, chop one and slice the other thinly.
Pineapple should have the skin removed, washed clean, and sliced thin. To save time, you should buy pre-peeled pineapple!
Green onions should have wilted leaves and roots removed, then washed clean. The green onion tops should be smashed and chopped finely, while the leaves should be diced.

Marinate and Braise Tofu
Put the tofu in a bowl, mix the tofu evenly with the seasoning mixture including: 1 spoon of salt, 1 spoon of monosodium glutamate, 1/2 spoon of vegetarian seasoning, 1 spoon of sugar, the chopped green onion tops, and let it sit for about 10 minutes for the tofu to absorb the seasoning.
Place a pot on the stove, add 1 tablespoon of cooking oil to the pot over medium heat, wait for the oil to heat up, then add minced garlic and chili to stir-fry until fragrant, then add the pineapple to the pot, stir well until the pineapple is just cooked, then add the marinated tofu, stirring gently.
Continue to add 100ml of water to the pot, braise on low heat until the water thickens, then taste and adjust the seasoning if needed, turn off the heat and serve on a plate, adding chopped green onion and chili on top to enhance the dish’s appeal.
