- To choose fresh okra, you should select those that are of medium size, light green, shiny, and have a thin layer of fuzz on the outside.

Prepare the ingredients
Wash the okra and cut off the stems, then drain in a colander. Use a knife to cut into diagonal slices about 1 – 2 finger lengths.
Trim the base of the oyster mushrooms and any spoiled parts, then wash them with diluted salt water. Cut the mushrooms into small pieces lengthwise and wash them 2 – 3 times with water, squeezing out the excess moisture.
Peel the garlic, rinse it briefly in water, and then mince it. Peel the green onions and wash them thoroughly. Crush the bulb part and chop the green leaves, placing them in a bowl.

Stir-fry the mixture
Place a pan on the stove, add 2 tablespoons of cooking oil, and heat it on low flame. When the oil is hot, add all the minced garlic and crushed onion and sauté until golden.
Then add the mushrooms to the pan and stir-fry briefly for about 1 minute, then add all the okra and stir well over high heat. Next, season with the spice mixture including: 1/2 teaspoon of sugar, 1/2 teaspoon of monosodium glutamate, and 1 teaspoon of salt.
Stir-fry for about 3 – 4 minutes until the okra is just cooked, adjust the seasoning to taste, and turn off the heat. Add a little chopped green onion and ground pepper to finish.
