How to choose fresh and delicious eel
- When buying eel, choose those that are still alive and of moderate size. Eels have two distinct colors: a black back and a yellow belly, which indicates they are wild eels from rivers and streams,… their meat will be firmer and tastier than farmed eels.
- If you cannot buy wild eels, you can buy farmed eels with a black belly; choose larger ones as they will be tastier.
How to prepare Crispy Eel with Green Pepper Sauce

Prepare the eel
Buy eels and remove the slime, gut them and wash thoroughly with diluted salt water. Cut the eel into pieces about 2 finger lengths long.
How to clean eel, remove the fishy smell
Method 1: Put the eel in a plastic bag with coarse salt, massage well for about 2 minutes, then remove all the slime and wash with lemon juice. Next, rinse thoroughly with clean water and let it drain.
Method 2: Use lemon juice or rice washing water to remove the slime from the eel, when you feel the eel is clean, gut it, remove the entrails, and wash again with diluted salt water.
Method 3: If you have kitchen ash, rub it on the eel and wipe off the slime several times with the ash. Finally, rinse with clean water.
Method 4: Put the eel in the freezer for about 2 hours, when ready to cook, take it out and soak in cold water, then use a mesh cloth to gently wipe the surface of the eel several times to remove the slime.

Marinate the eel
