How to choose fresh celery
- You should choose celery stalks that are evenly large leaves, not bruised.
- Choose celery with bright green leaves and white tender stalks. The stems and leaves should be thick, the stems should be clear, and there should be few roots.
- Avoid celery with unusually large white stems, as this celery has been excessively fertilized (with nitrogen, fresh manure, or compost).
- Do not choose dark-colored celery, uneven stalks, with many roots, bruised, or rotten.
How to choose fresh and delicious straw mushrooms
- You should choose mushrooms that are white, with short stems and round caps. When the mushrooms turn ivory or show signs of bruising… they are usually old, not tasty, or spoiled.
- Preferably choose medium-sized mushrooms that feel firm in your hand.
- Especially, you should sniff the mushrooms to see if they have a characteristic aroma. If the mushrooms smell sour or have an unusual odor, you should not choose them.
How to make Celery Mushroom Soup

Preparation of ingredients
First, for the celery you bought, remove the leaves and keep only the lower stalks. Wash them thoroughly, then cut them into small pieces.
For the straw mushrooms, wash them clean, let them drain, and then slice them thinly.
Next, dice the onion and finely chop 2 cloves of garlic.

Cook the soup
Place a pot on the stove and add 4 tablespoons of butter to the pan.
Wait for the butter to completely melt, then add all the chopped onions, stir well and sauté for about 1 – 2 minutes.
When the onions start to soften, gradually add the minced garlic and celery, cover with a lid and cook for 5 minutes. Then, add the button mushrooms, stir well, cover again and continue to cook for about 5 minutes.
Next, add 5 tablespoons of flour, along with 1 liter of water, then gradually add 2 teaspoons of chicken seasoning and 1/2 teaspoon of dried thyme, stir the mixture well, then cover the pot and cook for 15 minutes.
After cooking the mixture for 15 minutes, add 8 tablespoons of condensed milk to the pot. Cook until the mixture boils again, then add a bit of salt and pepper.

Serve the soup in a bowl, sprinkle a little chopped parsley on top.
