What is beef marrow?
- Beef marrow is a part inside the spine of cattle, and it can also be found in other bones but in smaller amounts. The marrow contains nerves that run from the brain throughout the body, which is why beef marrow is rich in nutrients that are beneficial for health.
- Fresh beef marrow will have a light pink color, and after cooking, it turns into an opaque white with a soft, sweet, and fatty flavor.
How to choose and where to buy beef marrow?
- You should buy beef marrow from larger bones such as the spine, thigh bones, or hip bones as they contain more marrow.
- Good beef marrow will have a natural light pink color, be soft, and have a glossy appearance. These are the parts of beef marrow that should be purchased.
- Avoid buying beef marrow from small bone tubes as they usually contain less marrow, which will not be usable in large amounts when cooking.
- Currently, you can easily find beef marrow at markets, supermarkets, or fresh food stores with prices ranging from 130,000 – 160,000/ 500gr (updated on 24/04/2021).
How to make Crispy Fried Beef Marrow

Prepare beef marrow
For 500gr of beef marrow, gently wash the marrow with diluted saltwater, then drain and rinse with clean water 2 – 3 times. After that, cut the beef marrow into bite-sized pieces.

Mix the beef marrow with flour
First, mix the beef marrow evenly with 1 teaspoon of seasoning, 1/2 teaspoon of monosodium glutamate, and 1/2 teaspoon of ground pepper on a large plate, and let it marinate for 5 minutes.
Then, sprinkle 100g of frying flour evenly onto the beef marrow, and use clean hands to mix the ingredients so that the flour adheres evenly to the marrow.
Next, roll the beef marrow in 100g of breadcrumb flour so that the flour coats all sides of the marrow evenly.

Fry the beef marrow for the first time
Turn on the stove to medium heat, add 500ml of cooking oil to the pan, when the oil is hot, add each piece of the coated beef marrow and deep-fry for 5 – 7 minutes until the marrow is golden and crispy, then remove and place it on a plate lined with paper towels.

Fry the beef marrow for the second time
Turn the previously used frying pan back on over medium heat; when the oil gets hot again, add the sliced shallots and garlic to sauté until fragrant.
Next, add the already fried beef marrow and fry for the second time for 5 minutes until the beef marrow is crispy and aromatic; then remove it and soak up any excess oil to finish.

So the crispy fried beef marrow is complete. You can slice some tomatoes and a bit of Vietnamese coriander, cilantro to arrange around the plate of fried beef marrow for a more appealing presentation and to accompany it to prevent getting bored.
