Information about beef marrow
What is beef marrow?
- Beef marrow is an important part of the cow, running along the inside of the spine, containing nerves that connect the brain to the entire body.
- Beef marrow usually has a long strip structure, with a light pink color, and when lifted, it has a slight elasticity.
- After processing, beef marrow has a cloudy white color, soft texture, looking quite similar to curd, and when eaten, it is very fatty and sweet, creating a sensation of melting in the mouth.
How to choose and where to buy beef marrow?
- You should choose beef marrow that has a light pink color, with a thin membrane around it that is still taut as this indicates fresh marrow.
- You should avoid marrow that has a foul smell, is slimy, or has a pale color; these signs usually indicate that the marrow is not good or has been left for too long.
- You can find beef marrow at markets, supermarkets, food stores, or at reputable beef shops to buy high-quality and safe marrow.
How to choose fresh, delicious eggs
- Choose eggs with an even-colored shell, without cracks or black spots. When touching the shell, it should feel slightly rough and bumpy, indicating fresh eggs.
- Hold the egg close to your ear and shake it gently; if the egg makes a loud noise, it means it has been stored for a long time.
- Avoid buying eggs with pale shells or many black spots.

How to prepare Beef Bone Marrow Fried with Egg
-
Prepare the beef bone marrow
After purchasing the beef bone marrow, you should remove the blood membrane layer on the outside, rinse briefly with diluted salt water to reduce the odor, then rinse several times with clean water and drain using a basket.
Next, you use scissors to cut the beef bone marrow into pieces about the length of a finger.
-
Marinate the beef bone marrow
First, you peel 7 shallots and chop them finely.
You place the cut beef bone marrow in a bowl, add 2/3 of the chopped shallots along with 1 tablespoon of minced garlic, 1 tablespoon of seasoning, 1 tablespoon of fish sauce, and finally 2 teaspoons of ground pepper.
You mix well and marinate the beef bone marrow for about 15 minutes to absorb the spices.
-
Fry beef marrow with eggs
You heat up a pan, add 2 tablespoons of cooking oil, then add 1/3 of the remaining minced shallots and a bit of chopped green onions to sauté until fragrant.
Next, you add the marinated beef marrow, stir well for about 2 – 3 minutes until the marrow firms up, then crack 6 chicken eggs into the pan, cover it, and fry for about 10 minutes on low heat, and it will be done!
Tip:
- When adding the chicken eggs, spread them evenly over the beef marrow so that the marrow can be submerged in the eggs, which will enhance the flavor when eating.
- If you like soft-boiled eggs, reduce the frying time for the eggs.
- You can also beat the eggs and fry them together with the marrow, which will be very delicious and the flavors will blend better.
