How to choose fresh strawberries
- Choose large strawberries that are bright red, juicy, and still have their green leaves intact.
- When buying, you should bring them to your nose to smell. Good strawberries will have a characteristic fragrant smell, so avoid those that have only a faint scent as they may have been heavily sprayed with chemicals.
- Do not choose overripe strawberries as the inside may be dry and hollow, which will not taste good when prepared.
- Avoid choosing strawberries that are dull in color, misshapen, or spoiled. Additionally, those with green skin and many spots should not be bought as strawberries will not ripen properly.
How to choose fresh and delicious mangoes
- Choose ripe mangoes that are uniformly yellow, have smooth skin, and do not have rough patches or tiny bruises.
- You can check the mango by squeezing the stem and smelling it; if the stem has a fragrant smell, then it is a fresh mango without preservatives.
- Avoid choosing mangoes that are too soft or too hard. Naturally ripe mangoes will have a certain firmness, feel solid in hand, and will not squish when pressed.

How to make Dry Fruit Cake

Prepare the dried fruit
Wash the strawberries, cut them in half, and remove the green tops.
Use a hand blender to blend them finely. Then, strain the strawberry mixture through a sieve to remove the pulp.
Do the same with the mango. After peeling and cutting the mango into small pieces, blend it finely and strain it through a sieve.
Next, separately cook the two blended fruit mixtures on the stove until they thicken.
Once the mixture thickens, turn off the heat and let it cool.
Tip: You can add 1 teaspoon of cornstarch to the strawberry or mango mixture if you want the cake to last longer. -
Whip the egg whites
Separate the whites of 2 eggs, then put a little salt into the bowl.
Use a mixer to beat until the egg whites form white bubbles, then add a little lemon juice to help the egg whites become fluffy and more stable.
Continue beating until the egg whites are fluffy and bubbly, then add 4 teaspoons of sugar and continue to beat until the mixture is smooth and forms stiff peaks, then stop.

Mixing the egg mixture
To make the pink cake batter, add 1/2 of the whipped egg whites into a bowl. Then add 20ml of blended strawberries and gently fold from the bottom up to avoid breaking the air bubbles.
Next, add the remaining egg mixture to 20ml of blended mango and mix in the same way as above, resulting in a yellow cake batter.

Shaping and Baking
Prepare a baking tray lined with a silicone mat or parchment paper. Preheat the oven to 120 degrees Celsius 15 minutes in advance to stabilize the temperature.
Then, place the pink cake batter into a piping bag fitted with a star tip and gently squeeze to pipe the cake batter onto the tray. Continue with the remaining yellow cake batter.
Place the tray in the preheated oven at a temperature of 100 – 110 degrees Celsius and bake for 70 – 90 minutes depending on the oven.
Finally, let the cake cool in the oven for 10 minutes instead of cooling it outside, so the cake will be as dry as possible.
Tip:- To prevent the cake from turning golden, you should cover the top of the cake with a layer of aluminum foil while baking.
