Prepare the Tuna
You can buy fresh tuna or pre-filleted tuna at the supermarket to save time.
Wash the fish under running water, use kitchen paper or a clean towel to dry the fish.
Cut the fish into small square pieces about 3-4 cm, so that it is easy to marinate and the seasoning can penetrate well.

Marinate the tuna
Add the pieces of fish into a large bowl.
Squeeze lime juice over the fish and mix well.
Add white wine to the bowl and stir to eliminate the fishy smell.
Cover the bowl tightly and marinate in the refrigerator for about 30 minutes.

Prepare the marinating oil
Heat olive oil in a small pan over medium heat. Make sure not to let the oil boil too much.
Add peeled and sliced garlic to the pan, add bay leaves (or oregano) and ground pepper for fragrance.
Simmer on low heat to allow the spices to blend together, then turn off the heat.

Making tuna in oil
Blanch the tuna in boiling water for about 2-3 minutes until it is partially cooked, then remove it to drain.
If you want the tuna to be fully cooked, you can simmer it on low heat for about 10 more minutes.
The jars or glass containers need to be thoroughly sterilized and completely dried.
Place the tuna in the jar and pour in the heated olive oil, ensuring that the oil completely covers the fish.
Let the oil cool completely, then cover and store it in the refrigerator.

Completion and storage
Let the tuna in oil sit for at least 24 hours in the refrigerator, ideally for a few days so that the spices are evenly absorbed and the dish becomes more flavorful.
