Prepare the pig trotters
Take the pig trotters and hang them up with wire, then use a torch to scorch around until the trotters are evenly golden, then chop the trotters into small bite-sized pieces. Then wash them again with water to clean the black marks on the skin.
How to clean and remove the odor from pig trotters
- Method 1: Blanch the trotters in boiling water for about 2 – 3 minutes, then rinse with cold water.
- Method 2: Use 2 tablespoons of lemon juice (vinegar, alcohol) to rub over the surface of the trotters, let sit for about 2 – 3 minutes, then rinse thoroughly with cold water.
- Method 3: Use coarse salt to rub and scrub the trotters, then wash them really clean.

Peel and finely chop the shallots and garlic. Use 1 stalk of lemongrass to finely chop, and cut the remaining 2 stalks into pieces and crush them.
Boil the peanuts in boiling water for about 10 minutes until cooked, then remove and drain. Peel the galangal, wash it clean, and cut it into thin slices.

Add 1 tablespoon of cooking oil along with the remaining minced onion and garlic into the pot, stir-frying until fragrant, then add crushed lemongrass and the marinated trotters.
Stir-fry over medium heat for about 3 – 5 minutes until the trotters are browned, then pour in 2 liters of boiling water, reduce the heat, and cook for about 30 minutes before adding the boiled peanuts. Mix well and cook for an additional 10 minutes, adjusting the seasoning to taste before turning off the heat.
