How to Cook Braised Carp

Prepare Ingredients
After purchasing the carp, to clean and remove the fishy smell, scrape off the scales, cut off the fins, gills, and remove the intestines and blood vessels located near the spine of the fish.
Soak the fish in diluted salt water for about 5 minutes, then rinse thoroughly with water and let it drain.
Effective Ways to Remove Fishy Smell
- Using salt: Add a little salt to diluted water, soak the fish for about 15 minutes, then rinse thoroughly with water.
- Using rice water: Soaking the fish in rice water is also effective in removing the fishy smell.
- Using alcohol: Soak the fish in water containing a little alcohol or lemon juice for about 15 – 20 minutes, then rinse clean.

Prepare other ingredients
Peel the garlic and then mince it. Clean the lemongrass, cut it in half, and then finely chop it with a knife. Crush the chili and then slice it. Clean the green onions and chop them finely.

Lightly fry the fish
Place a pan on the stove, add 3 tablespoons of cooking oil and heat it, then add the fish and fry over medium heat until the fish is golden brown on both sides, then remove it and let it drain.
Tip:
- Lightly frying the fish before stewing helps eliminate the fishy smell, shortens cooking time, and allows the fish to absorb the seasoning better.
- You should let the fish dry thoroughly before frying to prevent oil splatter during frying.

Fish Stew
Place a clay pot on the stove, add 2 tablespoons of sugar and stir well until the sugar dissolves and turns a brown color resembling that of a cockroach.
Next, add another 2 tablespoons of cooking oil and the minced garlic for fragrant frying.
When the garlic is aromatic, place the fish in the pot, then add lemongrass, chili, 50ml of water, 2 teaspoons of MSG, 1 teaspoon of sugar, 1 tablespoon of fish sauce, and 1 tablespoon of ground pepper into the pot.
Reduce the heat and proceed to stew the fish until the sauce thickens, then turn off the heat, and sprinkle a little chopped green onion on top to finish.
