How to choose fresh and delicious straw mushrooms
- You should choose round, intact straw mushrooms, medium-sized, not too large, not bruised, and still have buds, not fully bloomed.
- If mushrooms are left for too long, they will have a slightly moldy smell, so you should choose mushrooms that have a faint aroma as they are fresh.
- Currently, straw mushrooms are very prone to chemical preservation to maintain freshness for a longer time because this type of mushroom has a very short shelf life. Usually, straw mushrooms can only be kept for 1 day, so when selecting mushrooms, be mindful to avoid affecting your health!
How to cook Braised Straw Mushrooms with Pepper
-
Prepare mushrooms and other ingredients
First, prepare a basin of water and add 1 tablespoon of salt. Then peel off the black parts of the mushrooms to clean the remaining straw stuck to the mushrooms and soak them in the basin of water for about 10 minutes for better cleaning, then take them out to drain.
Wash green onions and bell peppers and let them drain. Then finely chop the green onions and slice the bell peppers into small rings.
Tip:
- You can replace salt with coarse salt to clean the mushrooms better!
- Do not wash mushrooms for too long as it will cause the loss of valuable nutrients inside the mushrooms.
-
Marinate the mushrooms
After preparing, you will marinate the mushrooms with 1 tablespoon of sugar, 1 teaspoon of vegetarian seasoning.
Mix well for 5 minutes to allow the mushrooms to absorb the seasoning.
Tip: You can add 1 tablespoon of cooking oil to make your finished dish more glossy and appealing!

Braised mushrooms
Place a pan on the stove and add 2 tablespoons of cooking oil, 1 teaspoon of minced garlic, and 1 teaspoon of minced shallots to sauté until fragrant. Next, add the straw mushrooms and stir-fry, being careful not to let the garlic burn.
Continue to stir-fry the straw mushrooms evenly for 2 minutes until fragrant. When the mushrooms start to heat up, reduce the heat and add 4 tablespoons of soy sauce, 1 tablespoon of vegetarian fish sauce, 1/4 teaspoon of seasoning powder, and 4 tablespoons of water. Then add half a teaspoon of ground pepper and sliced chili for aroma.
While waiting for the water to absorb into the mushrooms, remember to skim off any foam.
When the water has soaked into the mushrooms, to thicken the sauce, add 1 tablespoon of chili sauce and let it cook for another 10 minutes.
Finally, add green onions and chili, and our dish is complete.
Tip:
- If you prefer a saltier taste, you can add another half teaspoon of salt.
- You can substitute regular fish sauce if you do not have vegetarian fish sauce.
