How to Prepare Fish Cake Noodle Soup
-
Prepare the Ingredients
If using fish cake, slice the cake into thin pieces. If using fresh mackerel, cut the fish into thin slices or small pieces.
Peel and finely chop the shallots and garlic for frying.
Wash the coriander and chop it finely, set aside for topping the dish.
If using dry noodle, soak the noodle in cold water for about 30 minutes to soften it. If using fresh noodle, just wash it clean.
-
Cook the Broth
Place a 304 stainless steel pot on the stove, pour about 1.5 liters of water into the pot.
Add pork or chicken bones to the pot (if using the water from boiling mackerel, you can skip this step).
Bring the water to a boil, then reduce the heat to simmer the bones for about 30 minutes to 1 hour.
When the broth is clear, you can season it with 1 tablespoon of salt, 1 tablespoon of sugar, 2 tablespoons of fish sauce, 1 tablespoon of seasoning powder, and a bit of pepper.
-
Sauté garlic and onion
Place a pan on the stove, add cooking oil, and heat it up.
When the oil is hot, add chopped shallots and garlic, sauté until fragrant.
Add mackerel fish cake to the pan, stir evenly for about 3-5 minutes until the fish cake is firm and slightly golden.
-
Cook the noodle soup
When the broth is ready, add the noodle soup to the boiling broth pot.
Reduce the heat and cook for about 7-10 minutes until the noodles are soft.
Then, add the sautéed mackerel fish cake into the pot, stir gently and cook for another 5 minutes to let the fish cake absorb the flavors.
-
Finish and enjoy
After the noodle soup and fish cake are cooked, turn off the heat and ladle it into a bowl.
Sprinkle prepared cilantro on top to make the dish more appealing.
If desired, you can add a little ground pepper or fish sauce to enhance the flavor.
