Prepare the Chicken
Wash the chicken thoroughly and let it drain completely.

Make the Marinade for the Chicken
Chop or grind the onion and garlic.
Cut the chúc leaves into thin strips as finely as possible.
Mix all the spices, ground shallots, garlic, and chúc leaves to create a marinade mixture for the chicken.
Wear food gloves, evenly rub the marinade mixture on the outside and inside of the chicken. Gently massage to allow the meat to absorb the spices.
Let the chicken rest for about 30 minutes.

Use aluminum foil to line the bottom of the steamer.
Spread salt over the aluminum foil, and place lemongrass on top of the salt.
Put the chicken on top of the lemongrass, and cover the chicken with another piece of aluminum foil.
