Garlic and shallots should be peeled and minced. Green onions should have their roots trimmed, washed, and cut into bite-sized pieces about 1 finger width long.
Chili should have the stems removed, washed, and cut into strips.
-
Marinate the fish
You marinate the salmon with 1 tablespoon of fish sauce, rub evenly and let it marinate for 20 minutes for the fish to absorb the seasoning.
-
Fry the fish
Place a pan on the stove over medium heat, add 1 teaspoon of cooking oil to the pan, wait for the oil to heat up then add the salmon and sear each side for 30 seconds, then remove and let it drain oil.
-
Simmer the fish
You place a clay pot on the stove over medium heat, add 1 teaspoon of cooking oil to the pot, wait for the oil to heat up then add 1 teaspoon of sugar and melt it until the sugar turns a light brown color.
When the sugar just turns a light brown color, add shallots and garlic and stir for 10 seconds, then add 6 tablespoons of fish sauce and 6 tablespoons of water.
Bring the mixture to a boil then add the seared salmon, reduce the heat and simmer for another 15 minutes until the sauce thickens slightly, then season to taste before turning off the heat.
Tip: You should not cover the pot while simmering the fish, as this will make the fish mushy and not tasty when eaten.
-
Final Product
You place the braised salmon on a plate, sprinkle some pepper, and garnish with green onions and chili to complete the dish.
The finished braised salmon has an attractive brownish-yellow color, rich flavor, and a fatty texture. The braising sauce is very palatable and will taste great when served with hot rice!
