Extract the color from butterfly pea flowers
Place a pot on the stove, pour in 80ml of filtered water and bring to a boil over high heat. Once the water is boiling, add about 10 butterfly pea flowers, reduce to low heat, and cook for another 5 – 10 minutes until the flowers release a beautiful dark color, then turn off the heat.
After that, prepare a cup, use a strainer to filter the flower essence and discard the flower remnants. If you want a lighter color, you can add more water!

Knead the dough
Add 250gr tapioca flour into a bowl along with 70gr of sugar and mix well. Pour the butterfly pea flower extract into a pot and bring it to a boil, then slowly pour it into the flour (the water must be boiling at this time to knead the dough), while pouring the water, use chopsticks to stir evenly.
Then use your hands to knead the dough vigorously and evenly until the dough is smooth and no longer sticks to the bowl.
Place the dough in a clean bag to prevent it from drying out, let the dough rest for about 10 minutes, then take it out and roll it into small bite-sized balls.
Tip: While mixing the dough, if you find the dough a bit wet and sticky, you can add a little dry tapioca flour and continue kneading! -
Boiling Tapioca Pearls
Pour about 500ml of water into a pot and bring it to a boil over high heat. Once the water is boiling, add the tapioca pearls and use a ladle or spoon to stir continuously to prevent the pearls from sticking. Boil for about 5 minutes until the pearls rise to the surface, then boil for another 2 – 4 minutes before turning off the heat.
Cover the pot, reduce the heat to low, and wait an additional 30 minutes for the pearls to cook thoroughly and become chewy, with a certain degree of translucency. After 30 minutes, remove them and place them in a bowl of clean water, soaking for about 3 minutes until they cool before draining.
