Blend the leftover rice
First, put 1 cup of leftover rice and 800ml of water into a blender and blend for 5 minutes until smooth.
Next, pour the rice mixture through a sieve into a bowl, and mash the remaining rice on the sieve until finely ground.
Then, pour all of this mixture back into the blender, add 1 teaspoon of salt and blend for another 5 minutes.
Finally, let the mixture rest in the refrigerator overnight.

Make Green Onion Crepes
In a bowl, combine 500ml of the leftover rice mixture, 40g of tapioca flour, and 300ml of water, then stir well until the flour is dissolved. Let the mixture rest for 30 minutes. When you start frying, add 2 tablespoons of cooking oil and stir well.
Heat a pan on the stove, add 3 tablespoons of cooking oil and heat it up. Then, pour the hot oil into a bowl with chopped green onions and mix well.
Next, pour a ladle of batter into the pan, cover with a lid, and cook on low heat for about 3 minutes until the batter is cooked, then add the green onion oil. Continue covering and fry for another 2 minutes until the batter is crispy, then transfer to a plate and roll it up.
