Soak the sticky rice
First, you need to soak the sticky rice with 1 teaspoon of salt, submerged in water overnight before cooking the sticky rice. After that, rinse the sticky rice with clean water and drain it along with 1 tablespoon of cooking oil, mixing well.
Finally, take the opportunity to extract the first coconut milk from 200g of grated coconut with 50ml of water.
Tip: If you want the sticky rice to be more flavorful, you can add a little salt to the sticky rice right when mixing with the cooking oil. -
Make coconut milk with butterfly pea flowers
Wash 10g of butterfly pea flowers, then cook them with 60ml of water until the color of the butterfly pea flowers lightens and the water turns a darker color. Use chopsticks to stir well and cook over medium heat.
After that, strain the butterfly pea water through a sieve, add it to the bowl of the first coconut milk (that has been extracted), and stir well with 50g of granulated sugar.
Tip: You can use dried butterfly pea flowers instead of fresh ones. -
Steaming sticky rice
You put a bunch of pandan leaves (after washing) into the pot of water at the bottom of the steamer. Next, add the glutinous rice into the pot and cover it to steam the sticky rice for about 20 minutes over medium heat.
Once the rice is just cooked, you take the rice and put it into a bowl and mix it evenly with butterfly pea flower coconut milk.
Finally, you steam the rice again until cooked (about 15 – 20 minutes).
Tips to prevent the sticky rice from being mushy or dry:
- Spread the rice evenly so that it cooks more uniformly when steamed.
- Use chopsticks to poke 3 – 4 large holes in the middle of the rice to create air holes that help steam circulate evenly throughout the pot.
- The water added to the bottom pot of the steamer should occupy 1/3 of the pot’s volume to provide enough steam to soften the rice grains.
