How to choose delicious ripe bananas
- Choose bunches of bananas that are not uniformly colored (with yellow and green fruits) and have dark or deep pink spots.
- Avoid choosing fruits that are uniformly ripe with dark yellow skin.
- Naturally ripe bananas will have yellow stems and bodies. If the stem is green but the fruit is uniformly yellow, it has likely been soaked in chemicals.
- Naturally ripened bananas will have a fragrant smell and natural sweetness, soft texture. Chemically treated bananas will feel slightly fibrous, hard, have a bitter taste, and sourness when eaten.

How to make Banana Cake
-
Mix the flour mixture
Sift into a bowl 230g of all-purpose flour, 30g of banana flour, 70g of sugar, 1 teaspoon of baking powder, and 1/2 teaspoon of salt. Use a whisk to mix the ingredients until well combined.
Next, separate 6 egg yolks (set aside the egg whites for the next step) and add them to the bowl along with 150ml of unsweetened milk and 120ml of cooking oil. Continue to stir until the mixture is smooth.
-
Mix banana with the flour mixture
Mash 1 ripe banana until smooth, then add it to the flour bowl and stir well.
-
Whip the egg whites and mix with the banana flour mixture
Put 6 egg whites into a new bowl, use a mixer on low speed until the egg whites form tiny bubbles like soap.
Divide 100g of sugar into 3 portions, adding each portion to the egg whites and beating at medium speed until the sugar dissolves. When adding the last portion of sugar, increase the mixer to high speed and beat until the egg whites are soft and fluffy, forming peaks that bend downwards.
Tip: To achieve fluffy egg whites, ensure that they are at room temperature and free from any impurities such as egg yolks or oil.Divide the whipped egg whites into 3 portions, gradually adding 2 portions to the flour mixture and gently folding with a whisk in one direction, from the inside out.
Next, pour the mixed flour mixture into the remaining egg whites. Use a spatula to gently fold the mixture from the bottom to the top. Bring the spatula down to the bottom of the bowl, lifting the heavy ingredients up and folding them to the side. Continue this process until the mixture is well combined.
-
Pour into the mold and bake
Preheat the oven to 170 degrees Celsius for 10 minutes.
Prepare a rectangular mold lined with parchment paper, then pour the cake batter in, gently tap the mold on the table a few times to break large air bubbles. Bake the cake at 170 degrees Celsius for 20 – 30 minutes.
-
Making banana custard ice cream
Sift 60g of cornstarch, 30g of banana powder, and 70g of sugar into a pot and mix well.
Place the pot on the stove, gradually add 660ml of unsweetened fresh milk, and stir continuously over low heat until the mixture dissolves and is no longer lumpy.
Beat 4 eggs and add them to the pot, stirring continuously until the mixture thickens, then turn off the heat. Next, add 2 teaspoons of vanilla extract and stir the mixture one more time until well combined.
Finally, strain the mixture through a sieve until smooth. Use plastic wrap to tightly cover the surface of the mixture and place it in the refrigerator for 1 hour.
-
Whipping cream
Add 200ml of whipping cream and 20g of powdered sugar to a bowl, then place this bowl into another bowl filled with ice water.
Use a mixer to whip the mixture on medium speed until stiff peaks form.
-
Frosting and Decoration
After baking, place the cake on a wire rack to cool completely.
Then, use a knife to cut the cake into two equal halves. Next, use a mixer to blend the banana custard cream for about 10 seconds until smooth.
Place one cake piece on a plate lined with parchment paper (with the burnt side facing up). Then, spread a layer of banana custard cream on top about the thickness of a small finger.
Continue by placing another piece of cake on top and spreading the remaining banana custard cream over it. Cut the edges around the cake to make it square and refrigerate for 30 minutes to set.
After 30 minutes, take the cake out and pipe whipped cream on top, adding sliced bananas for decoration to finish.
