- You should choose pieces of pork that are bright in color, pink or light red, with a fat layer about 1.5 – 2 finger widths thick and a natural off-white color. When smelling, you should feel the natural aroma of the meat, without any fishy odor.
- Additionally, you can gently press the meat with your finger to check for elasticity; if it returns to its original shape after you remove your finger, it is fresh meat.
- Avoid choosing pieces of meat that are pale or too dark, have a slimy layer on the outside, and emit a spoiled smell, as these are signs that the meat has gone bad, has been stored for too long, and is no longer fresh.
How to choose fresh, delicious chicken eggs
- You should choose chicken eggs with a dark brown shell, without black spots, and when you touch the surface, you will feel a rough texture; these are fresh chicken eggs.
- Additionally, you can check the freshness of the eggs by shining a light on them; if the yolk is round and stationary, with an orange or light pink color, and the egg white is clear, then these are fresh chicken eggs.
- Avoid choosing eggs that are pale in color, have many black spots, and feel smooth to the touch, as these are eggs that have been stored for a long time and are no longer fresh and delicious.

Prepare the pork
To reduce the odor of the pork, you can rub a little salt directly onto the meat, wash it clean 2 – 3 times with water, and then let it drain.
Then, place it on a cutting board and chop it finely, but do not chop too finely as this will cause the minced meat cake to lose its crispiness and fluffiness.

Prepare other ingredients
Green onions bought should have the roots and yellow leaves cut off, washed clean, and separated into the bulbs and the leaves. Then crush the bulbs and chop them finely, while the green leaves should be diced small.
Shallots should be peeled, rinsed briefly with water, drained, and then chopped finely.

Marinate minced meat
Put the minced meat into a small bowl and marinate with a mixture of seasonings that includes: 2 teaspoons of ground pepper, 1/2 tablespoon of fish sauce, 1/2 teaspoon of salt, 1 teaspoon of monosodium glutamate, 1 teaspoon of sugar, and 1/2 tablespoon of corn starch.
Then mix all these seasonings together and add the chopped shallots, chopped green onion tops from earlier, and the diced green leaves.
Mix well and continue to crack an egg into the mixture and stir thoroughly. Marinate the meat for about 30 minutes for the flavors to penetrate; the longer the marination, the more flavorful and delicious the minced meat will be.

Fry the meat
After marinating for the required time, proceed to shape the meat into small bite-sized balls. Press the meat balls slightly flat, about the size of your palm, to make frying easier.
Place a pan on the stove, add 3 tablespoons of cooking oil, and heat it over medium heat. Wait until the oil is hot and shimmering, then drop the meat in to fry.
Fry on low heat to ensure the meat is golden brown on both sides, without being burnt on the outside and raw on the inside. Fry until the minced meat cake is evenly golden on both sides, and continue this process until all the meat is used up.
