How to choose fresh, safe sturgeon:
- If buying fresh whole sturgeon, you should choose those with clear eyes, swimming vigorously, and when touched, the flesh feels firm and has high elasticity. Additionally, fresh sturgeon usually has bright, smooth skin and a white belly without any red sores.
- If buying frozen sturgeon, you should choose fish that still look intact as when they were alive. At the same time, the fish should not be soft or leaking water, and should not have an unpleasant fishy smell.
How to prepare Fried Sturgeon

Preparing the sturgeon
After purchasing the sturgeon, you should wash it thoroughly, cut off the head, scale it, remove the tail, eviscerate it, and wash it again with water. Then, take it out and dry it well to significantly reduce the fishy smell.
Next, use a knife to slice the fish into pieces about 1cm thick. If the fish still feels slimy, wash it 1-2 more times with water and let it drain.
How to clean sturgeon, removing slime- Step 1: Rinse the sturgeon with clean water and dip it in water at about 60-70 degrees Celsius. When the slimy layer rises, use a knife to scrape it off thoroughly.
- Step 2: Use a large, sharp knife to start cutting from the large scales in the middle of the fish. Then move to the scales on both sides, and finally to the scales underneath the belly.
- Step 3: Cut off the fins on both sides and scrape once more to clean off any remaining slime, ensuring the fish is scale-free. At the same time, you should use lemon to rub on the fish’s surface, then rinse with clean water to reduce the fishy smell.
- Step 4: Finally, cut off 1/3 of the fish’s tail, gut the fish along the spine from bottom to top, and remove the head, then take out all the internal organs.

Marinate the sturgeon
Once the sturgeon is dry, place it in a bowl, then add 2 teaspoons of sesame oil, 1 egg yolk, 2 teaspoons of sugar, 3 teaspoons of seasoning, 2 teaspoons of monosodium glutamate, 1/2 teaspoon of pepper, annatto oil, and chili paste. Next, squeeze minced ginger and minced shallots to extract the juice and add it to the mixture, then mix well.
Next, add 50g of all-purpose flour to the bowl with the fish and continue to mix until the fish is thoroughly coated. Marinate the fish mixture for about 10 minutes.

Coat the fish with flour
Place the breadcrumbs on a plate, then take each piece of marinated fish, roll it in the breadcrumbs once, and place it on another plate. Avoid rolling the fish multiple times as it will make the coating less crispy when frying.
Continue to coat the remaining fish with breadcrumbs.
Tip: When arranging the coated fish on the plate, do not stack them on top of each other as it will make the coating tough and less tasty when frying. It’s better to arrange the fish pieces separately for easier frying. -
Fry the fish
Place a pan with oil on the stove, when the oil is hot, add each piece of fish from the plate, doing this will keep the pieces of fish separate and prevent them from sticking together.
Fry the fish for about 1 – 2 minutes depending on whether the heat is high or low. When the fish pieces are golden, increase the heat to make them crispy and prevent them from becoming too soft.

After frying, remove the fish and arrange it around the plate, placing a few coriander leaves in the center for decoration, and the crispy sturgeon fish dish is ready.
