- Matcha powder is a fine powder made from 100% young tea buds. This type of powder differs significantly from green tea powder in terms of nutritional value and price, as green tea powder is made only from 30% young tea buds and the remaining 70% from young tea leaves.
- Matcha powder has a bright green color and a sweet bitter aftertaste, unlike green tea powder, which is dark green, can be slightly yellowish, and has a bitter astringent taste.

How to make green tea (matcha) cheese tart

Mix the dry ingredients
Put 75g of flour, 8g of cocoa powder, and 12g of almond flour into a bowl and mix well.
Then, add 40g of cold unsalted butter and use your hands to mix until the mixture is well combined.
Next, add 15g of beaten egg and continue mixing until it forms a smooth, homogeneous dough.
Finally, wrap the dough tightly in plastic wrap and let it rest in the refrigerator for 30 minutes.

Rolling and cutting the dough
Dust the dough with a little dry flour to prevent sticking, then use a rolling pin to flatten it.
Next, use a 12cm round removable base mold to cut the dough.

Pouring the tart shell
Place the dough piece and the 12cm round mold into a larger round mold lined with parchment paper.
Roll out the remaining dough into a rectangle with a width equal to the height of the 12cm mold. Then, place this piece of dough inside the mold and press it firmly with your hands, using a knife to trim off the excess edges.
Preheat the oven to 180 degrees Celsius for 10 minutes.
Use a fork to prick the surface of the tart base evenly, then bake for 25 minutes at 180 degrees Celsius.

Place a bowl over a pot of hot water, then add 190g cream cheese, 70ml whipping cream, 35g powdered sugar, 6g flour, 8g green tea powder, and 40g chicken egg. Stir the mixture until smooth and well combined.
Strain this mixture into a pot, then stir continuously over low heat until it thickens, then turn off the heat and let it cool.

Spread the matcha mixture evenly into the tart base. Then mix 1 egg yolk with 15ml of unsweetened fresh milk and brush it evenly over the mixture.
