Cook the Sugar Syrup
Add 250 ml of water, 1 tablespoon of lemon juice, and 600 gr of sugar into the quánh and bring to a boil.
Continue to simmer the sugar over low heat for about 12 – 15 more minutes.
Remove the quánh from the heat and let it sit, but keep an eye on it to prevent the syrup from cooling down.

Mix the cornstarch
Add 90 gr of cornstarch and 575 ml of water into the pan. Add 1 tablespoon of cream of tartar.
Stir the mixture well to prevent the cornstarch from clumping.

Cook the cornstarch
Place the cornstarch mixture on the stove and continuously stir while cooking until the mixture thickens as shown in the picture.
Gradually add the syrup.
Tip: Only add the syrup gradually in small amounts to allow the cornstarch and syrup to blend. Add a little syrup and stir the mixture well. Then continue adding until all the syrup is used.After adding all the syrup, lower the heat and continue to stir the mixture constantly for 30 – 45 minutes.

Create color and aroma
Add vanilla and food coloring to the mixture to enhance the flavor and make the candy look better.
Stir the mixture for another 2 minutes.

Pour the candy into molds
With this recipe, we choose a 15 mold to shape the candy.
Line the bottom with parchment paper, and brush cooking oil around the mold to prevent the candy from sticking.
Pour the candy into the mold. Let the candy cool at room temperature for about 3 – 4 hours. Absolutely do not put it in the refrigerator.

Remove the candy from the mold
After the candy cools, it will have high elasticity and will not melt.
Use cornstarch to dust the surface of the candy, then turn the mold upside down to remove the candy.
Peel off the parchment paper, and continue to dust the candy evenly with cornstarch.

Completion and Enjoyment
Divide the candy into 5 equal parts and further cut into bite-sized squares.
Roll the candy pieces in cornstarch and enjoy.
