- For minced meat and egg porridge, you should choose pork in the ratio of 2 fat – 8 lean so that the porridge has some richness without being greasy!
- Good quality pork has the lean and fatty parts sticking together, not separated, the meat has a bright color, the lean part is light pink, and the fat part is opaque white.
- You should choose meat with a dry surface; when pressed lightly, it feels firm and slightly sticky. When sniffed, it has a characteristic aroma.
- Avoid choosing pork that has a pale color, with the fat and lean parts separated, meat that is slimy or has an unpleasant odor, as this indicates that the pork is not fresh or spoiled.

- There are 2 types of chicken eggs: free-range eggs and industrial eggs. Free-range eggs have a more delicious taste and are richer in nutrients; however, if you cannot find free-range eggs, using industrial eggs is still acceptable.
- When choosing industrial chicken eggs, you should select those with dark and uniform shells, slightly rough surface, and when shaken lightly, there is no sound, which indicates these are fresh eggs.
- Eggs with pale colors, smooth shells, and tiny black spots, which make a clear sound when shaken, should not be purchased as these are either old or may be spoiled inside.

Prepare rice and cook porridge
Put 70g of regular rice and 30g of sticky rice into a bowl, add water to cover the surface and soak for 2 – 3 hours to allow the rice to expand and soften.
After the rice has soaked for the required time, rinse it with clean water once more, then put it into a pot. Next, add 1 liter of water to the pot and place the pot of porridge on the stove, cooking over medium heat for about 10 – 15 minutes until the porridge boils.

Prepare the ingredients
Pork after being cleaned and drained should be sliced thinly with a knife for easier chopping. After chopping for about 5 – 7 minutes when the meat is finely minced, transfer it to a bowl.
Green onions and shallots should be peeled, washed, and chopped finely.

Marinate and stir-fry the meat
While waiting for the porridge to boil, we marinate the minced meat and stir-fry it briefly to seal in the juices.
Marinate the minced meat with half of the finely chopped shallots, half a teaspoon of pepper, one teaspoon of seasoning powder, one teaspoon of fish sauce, and a little water. Use chopsticks to mix well so that the meat absorbs the seasoning evenly.
Heat a pan on medium heat, add a little cooking oil. When the oil is hot, add the remaining chopped shallots to the pan to sauté until fragrant. When the shallots turn slightly golden and fragrant, add the marinated meat and stir-fry for about 3 minutes until the meat is sealed.

Finish the porridge
After about 10 – 15 minutes, the porridge has boiled and thickened a bit, at this point add the stir-fried minced meat into the porridge. Now you season the porridge with 1 spoon of salt. Use chopsticks to stir gently to dissolve the salt as well as to mix the minced meat and porridge together.
Cook for another 5 minutes, then turn off the heat and scoop the porridge into a bowl. While the porridge is still hot, crack an egg into the bowl of porridge, sprinkle a little pepper and chopped green onions to complete.
