- You should choose jackfruit that is evenly rounded, not dented as those spots are often damaged by hard insects, which can lead to worms or a lot of fibers.
- Use your hand to press on the skin; if the jackfruit is soft, it is ripe. Moreover, observe the spikes on the skin; if they are no longer sharp, sparse, and tend to swell, the jackfruit is ripe.
- When cutting the top of the jackfruit, if you do not see or see little white latex, then it is tree-ripened jackfruit. Conversely, jackfruit that has been chemically treated will produce white latex.
- In this dish, you should use sliced jackfruit for a crunchier texture; when stir-frying, the jackfruit will not become mushy.
