How to choose fresh and delicious northern plums
- Choose plums that are large, round, with smooth red or dark red skin. Additionally, opt for those with a white powdery coating on the skin as these are freshly picked plums.
- You can gently press the plum with your hand; if it is slightly soft, it will have a very sweet taste. Conversely, if the plum is still hard, it will taste very sour and astringent. However, you should also avoid choosing plums that are too soft and showing signs of mushiness.
- Avoid selecting plums that are green or half red half green because these are unripe and will taste sour. Do not choose those that are bruised, have dark spots, or are leaking juice.
- You should buy plums in the right season, around mid-May to the end of June; this is the best time to easily select fresh and reasonably priced plums.

How to make Plum Mousse Cake

Make the cake base
Cover a large piece of plastic wrap over the cake mold, then secure this wrap so that it tightly hugs the bottom of the mold.Continue to do the same with a second layer of wrap to make the mold more secure.
Put 100 grams of cracker cookies into a plastic bag, use a rolling pin or pestle to crush the cookies into fine crumbs.
Next, place the crushed cookies into a bowl along with 50 grams of melted unsalted butter, and mix well to combine the mixture.
Finally, pour the cookie mixture into the mold, using a cup to press down firmly to compact the mixture evenly at the bottom of the mold.

Making Plum Mousse
Add 320g of fresh cream into a bowl, and use a mixer to whip at medium speed until the cream is soft and forms peaks that bend downwards, which is the desired consistency.
Next, add 180g of plum syrup and use a spatula to gently mix until the mixture is combined.
In a small bowl, add 6g of gelatin and 30ml of cold water, stir well and let it soak for 10 minutes for the gelatin to bloom. After 10 minutes, heat the gelatin in the microwave for 5 – 7 seconds to melt it.
Then, pour the gelatin into the mousse mixture and mix well once more.
Finally, pour the plum mousse into a cake mold, gently shake to spread the cream evenly, then refrigerate for 3 hours to set.

Making Plum Jelly
Add 5g of gelatin and 25ml of cold water to a bowl, stir well and let it soak for 10 minutes. After 10 minutes, heat the gelatin in the microwave to melt it.
Add 90ml of filtered water, 80g of plum syrup, and the melted gelatin into a bowl, and stir well to combine.
Next, pour the plum jelly mixture over the set cake. Continue to refrigerate for 2 – 3 hours for the cake to set completely.

Decoration and completion
Remove the cling film from the mold, then wrap it around with a towel soaked in hot water, holding it steady for about 20 seconds. Next, slowly lift the mold off the cake.
Add 100g of fresh cream and 10g of sugar into a bowl, use a mixer to whip the cream until soft peaks form, about 60%. The cream at this point will still be liquid, slightly thick, able to create patterns but not peaks.
Next, put the cream into a piping bag and draw many circular shapes on the surface of the cake.
Finally, cut the plums into four equal parts and use them to decorate the top of the cake to finish.
