How to make Shaved Ice with Green Tea

Make matcha syrup
Put 35g of sugar and 1 tablespoon of Japanese green tea powder (matcha) into a bowl, and use a whisk to mix well.
Then, slowly pour 55ml of hot water into the bowl, stirring as you pour to completely dissolve the powder and sugar.

Knead the glutinous rice flour
Put 40g of glutinous rice flour, 5g of sugar, and 2 tablespoons of water into a bowl and mix well with a spoon.
Continue to add 2 more tablespoons of water to the bowl and mix until the flour absorbs the water evenly, then use your hands to knead until the dough sticks together into a uniform, smooth, and non-sticky mass.

Shape and boil the sticky rice cake
You divide the dough into 12 equal parts, then roll them into balls, then gently press down on the dough and use your thumb to press in the center to create a dent on the surface of the dough.
Boil a pot of water, when the water is boiling, drop the dough balls in to cook. After about 2 minutes, when the cake floats up, it means it is cooked, you take the cake out and drop it into a bowl of ice water to prevent the cakes from sticking together and to create chewiness.

Shave ice and finish
Add ice into the ice shaver, then in each bowl of shaved ice, drizzle a little matcha sauce on top, then add about 20 grams of red bean jam and a few pieces of sticky rice cake on top.
Finally, drizzle a little condensed milk on top and you can enjoy right away.
Tip: If you don’t have an ice shaver, you can put ice in a zip bag, cover it with a cloth, and use a pestle to crush it until it’s finely crushed. -
