- The skin of good gourd will have a bright green color, straight body, and a stem that still has sap; choose gourds of moderate size.
- If you touch the outer skin and feel a layer of fine hair, then you should buy it as this indicates it is freshly cut gourd.
- Do not buy old gourds or those with black spots, or gourds that are rotten or spoiled.

How to choose fresh and delicious eggs
- Choose eggs with a colored, even shell, without cracks or dark spots.
- When touching the eggshell, it should feel slightly rough and textured, indicating fresh eggs.
- When shining a light on the egg, if you see a small air chamber and the yolk is round and stays in place with minimal movement, it is a new egg.
- Avoid buying eggs with pale shells and many dark spots.
- Hold the egg close to your ear and shake it gently; if it makes a louder noise, it has been stored longer.

How to make Stir-fried Gourd with Eggs

Prepare the gourd
After buying the gourd, use a knife to lightly cut a few lines on the skin to allow the gourd to exude sap. Then peel off the skin, wash it with clean water, and let it drain.
Cut the gourd in half lengthwise and then cut it into bite-sized pieces (you can keep or remove some of the seeds as you like). -
Stir-fried gourd with eggs
Place a pan on the stove, heat 2 tablespoons of cooking oil over medium heat, then add the sliced gourd and stir-fry for about 1 minute until the gourd is well-coated with oil.
Next, add about 1/4 bowl of water (rice bowl) and stir-fry for 5 minutes until the gourd is soft.
When the gourd is soft and has reduced some water in the pan, crack in 2 eggs. Stir continuously to coat the eggs evenly around each piece of gourd and avoid clumping.
Season with: 2 spoons of seasoning powder, 1/2 spoon of monosodium glutamate, and stir-fry for 3 minutes for the seasoning to absorb into the gourd and eggs, then taste and adjust seasoning as needed before turning off the heat.
Finally, transfer the stir-fried gourd with eggs to a plate, sprinkle a little ground pepper for added aroma, and it’s ready to serve.
