How to choose fresh and delicious snakehead fish
- Choose snakehead fish with a brown or grayish silver back, and a belly with a lot of white color. Do not select fish with cloudy eyes, and if it feels soft and mushy when picked up.
- For snakehead fish that are no longer alive or have been chilled, you should choose those with a straight, elongated, and evenly round body.
Tips for cleaning snakehead fish slime
- Clean with salt and vinegar: Rinse several times with water combined with salt and vinegar.
- Clean with hot water: Boil a pot of water until just boiling, then turn off the heat and pour it evenly over the fish or soak the fish in it, using a knife or wearing gloves to scrub and scrape off all the slime stuck to the fish. Finally, wash the fish thoroughly with water.

How to cook Snakehead fish braised with pepper
-
Prepare snakehead fish
Wash the snakehead fish and clean the slime. Let the fish drain, then cut off the tail; you may not need to gut it to retain the unique bitter taste of the fish’s intestines.

Prepare other ingredients
Press and finely chop 3 cloves of garlic, 1 onion, and 1 chili pepper. Use the green onion bulbs, crush them, and then chop finely.
Tip: If possible, use a blender or mortar to grind the ingredients very finely for better marinating.
-
Marinate snakehead fish
Add 2 tablespoons of sugar, 1/2 tablespoon of monosodium glutamate, 1 tablespoon of seasoning powder, 1/2 tablespoon of salt, and 3 tablespoons of fish sauce to the snakehead fish. Continue to add all the minced onion/garlic/chili and mix well. You can adjust the ingredients according to your taste!
Marinate the fish for 20 – 30 minutes to absorb the seasoning.
-
Cook the fish
Place a pot on the stove, add 3 tablespoons of sugar and 2 tablespoons of water, and cook over low heat. Stir gently until the sugar dissolves and turns a brown color.
Add the fish to the pot, stirring quickly so that the fish absorbs the color. Initially, you should cook the fish over high heat; once it boils, reduce to low heat and cook for 10 minutes. Just before turning off the heat, add chopped scallions and chili, and sprinkle some ground pepper on top to finish.
Tip: After lowering the heat, you can drizzle a little fat or cooking oil on top to give the fish a glossy finish and a richer flavor.
